Sodium alginate is a kind of polysaccharide extracted from kelp-like Phaeophyceae; formed by α-L-Mannuronic acid (M section) and β-D-Guluronic acid (G section) connected through 1, 4-glucosidic bond.
Appearance:
White or pale yellow powder, odorless and tasteless.

Features:
Thickening properties. Sodium alginate readily dissolves in water to form high-viscosity solutions, making it widely used as a thickening agent in food, daily chemical, and other industries.
Gelation. Sodium alginate rapidly undergoes ion exchange with calcium ions to form gels.
Application:
Different ratios can produce gels of varying strengths, and gels of different strengths can be used in applications such as food imitations, medical materials, facial masks, water treatment agents, and plastic wrap.
