T-2 toxin, a fusarium toxin alongside deoxynivalenol, zearalenone, fumonisines, and other trichothecenes, can induce gastroenteritis, bone marrow damage, and skin/respiratory passage necrosis at acute doses. Its heat stability allows detection even in baked goods, leading many countries to implement strict legal controls or monitoring systems.
