Product Description
Polylysine is a homopolymer of L-lysine, one of the essential amino acids. It is linked by a peptide bond formed with α-carboxyl of L-lysine and ε-azyl from other L-lysine, with a molecular weight between 4130-5776, usually used as a food preservative. It has a wide antimicrobial spectrum, good heat resistance, and wide pH range adaptions, and other advantages.
Features
Wide antibacterial spectrum. ε-polylysine has a good inhibitory effect on bacteria, mold, and yeast.
Good heat resistance. With 120°C treatment for 60 minutes, the antibacterial effect is still stable.
Applicable to a wide pH range. The antibacterial effect is good at pH 3-9.
Good water solubility. Easy to use, does not affect the food flavor.
Application
Make a 5-10% solution with cold boiled water or distilled water, and then add it to food and mix it thoroughly. Or, can make different preparations with acetic acid, glycerin, and other materials, and add them to food.
