Scientific Background
Sudan Red is a synthetic azo and oil-soluble chemical dye, which is a lipophilic azo compound, mainly including four types I, II, III and IV. Sudan red is widely used in the fields of biology, chemistry, etc. It is mainly used in industrial products such as engine oil, automobile wax and shoe polish, and can also be used for fireworks coloring. Because of its bright dyeing, it has been used in food processing by some unscrupulous merchants in order to improve the color of the product or maintain the original color, improve the sensory traits of food and enhance people's appetite. Because Sudan red is carcinogenic and has obvious toxic effects on human liver and kidney organs, the International Agency for Research on Cancer (IARC) classifies Sudan Red as the third carcinogen.
Technical Notes
1.This method can determine whether Sudan red is added to the sample, and it also has a certain reference value for determining whether other oil-soluble non-food colorings are added to the sample.
2.If spots appear on the top of the spreading agent or the origin of the spot, it may be an interfering substance. Spots appear in other positions in the unfolding track, which can be preliminarily determined to contain non-food coloring, which can be further confirmed by HPLC.
3.When the number of samples to be tested is large, it is not necessary to point the control solution on each chromatographic plate. You can point several samples at a time. When spots appear during the unfolding process, you need to repeat the experiment and then point the control solution.
4.When the control solution is found to be volatilized, a small amount of n-hexane can be added for mixing.
5.The positive samples detected on site should be sent to the laboratory for confirmation. HPLC is required for accurate quantification.
