Description
Grape skin red is a purple pigment obtained by extracting polyphenols in grape pomace with ethanol as an extraction agent. It is soluble in water, ethanol, and propylene glycol, but insoluble in oil.
Properties
The hue of grape skin red changes with the change of pH value, it is red to purple in acidity, and dark blue in alkalinity.
Applications
Used in frozen drinks (except edible ice), jam, candy, pastry, beverages (except packaged drinking water), prepared wine, etc.
Storage
Kept out of sunlight or high temperature. Store in cool and dry places. Once opened,use it up quickly.
