Lycopene is widely found in tomatoes, tomato products, watermelon, grapefruit and other fruits. It is the main pigment in ripe tomatoes, one of the common carotenoids, and a red pigment. Dark red needle-like crystal, soluble in chloroform, benzene and oil but not in water. It is unstable to light and oxygen, and turns brown in the presence of iron. Higher levels are found in the fruits of mature red plants. It can be used as a pigment in food processing, and is also commonly used as a raw material for antioxidant health food.
